It looks like the game in the video is based on the dk’tronics hardware, which uses UDG (user defined graphics chars). So it is still text mode, but the chars are changed. If you want perfect VGA, you can create this simple circuit, and upload the firmware to a ESP32. Then you have VGA output.

It even includes a webserver to upload files, to fast load into the ZX81.
