OK, so I have bad news.

Although the concert was good (it was this weekend) and we played from our Spectrums
(some photos / videos:

but sadly the ZX81 didn't work.

And it seems like it will be impossible to use it live anyway.
it was resetting repeatedly, all the time, in rhythm of stronger volume kicks.
So visibly the power-grid in the place was SUCKING.

The problem is, we should expect such an effect every time. The ZX81 works in a stable way at homes but cannot be stable in clubs, with all the electronic hardware working and connected each other. Power surges were all the time. :(

perhaps a different power supply could be used, one with a good amount of smoothing caps, and possibly used an isolating intterconnect lead for the audio ( the type with little transformers in them )

Well, this time maybe still not what we really wanted but at least in a part. ;)
As I wasn't able to play from ZX81 due to resets, I converted my ZX81 songs into ZX Spectrum and played the songs I made entirely on ZX81, in the last weekend concert in Gdansk (Danzig) - from ZX Spectrum. :) Well, better this than nothing, I suspect. ;) At least for now.
http://youtu.be/w6L7uMVe3DA (the second song, as the first was from Atari 520ST that I used also in the concert, along with Amiga 1200. But 2/3 of music - it was ZX Spectrum and my ZX81 tunes).
