When i wrote my ZX81EMULATOR for the ZX Spectrum I played the following games a lot.

RED ANTS
GRAFFITY

3D Monster Maze is already mentioned.

Despite running at app. 33% of speed these games played very well
(Where, I admit, the delayloop in 3D Monster Maze was taken out)

Bowling, Hunt the Wumpus, Locomotion and Police Patrol (for the time you will need to play all levels)

City Patrol
Treasure Hunter (Em Busca dos Tesouros)
Sega Frogger

And loads of other too...

And since you have the hardware capability for HiRes then anything by Fred Nachbaur at

is worth a download. The best dungeon crawl for the ZX81 is probably "Dungeons of Ymir".

Thanks everyone, I have spent a productive hour or two finding and downloading many of these games. Still having some problems getting a stable screen with my ZXpand connected, but I hope to start with some of the 'original' games tomorrow... :D

Regarding the original games I'd like to add GULP 2 (PacMan style, machine code) and the Trader Trilogy (BASIC, came on three cassettes!). I liked those very much back in the old days.
