When i wrote my ZX81EMULATOR for the ZX Spectrum I played the following games a lot.
RED ANTS
GRAFFITY
3D Monster Maze is already mentioned.
Despite running at app. 33% of speed these games played very well
(Where, I admit, the delayloop in 3D Monster Maze was taken out)

And since you have the hardware capability for HiRes then anything by Fred Nachbaur at

is worth a download. The best dungeon crawl for the ZX81 is probably "Dungeons of Ymir".

Thanks everyone, I have spent a productive hour or two finding and downloading many of these games. Still having some problems getting a stable screen with my ZXpand connected, but I hope to start with some of the 'original' games tomorrow...

Regarding the original games I'd like to add GULP 2 (PacMan style, machine code) and the Trader Trilogy (BASIC, came on three cassettes!). I liked those very much back in the old days.
