How do you use those? Do they go in alongside the cable, or instead of and then the keyboard ribbon clips on?

You put the ends of the cable through the holes, solder them in place and then push the soldered board into the keyboard connectors.
I don’t use them personally so I assume that is what you do!

If that is the case, then it seems to me that it's a better solution than risking de-soldering the headers from the motherboard, to replace with pin headers.
The bank of five has traces which I've found lift very easily.

I would definitely not remove the connectors unless necessary.
Although awkward until you get the hang of it the wired ends of the cables fit well into the existing connectors.
You just need to make sure you don’t bend the wires when removing the protectors and then push them straight into the connectors. Once safely in then bend the ribbon to fit to the case.
Easy for me to say after fitting so many of these but it can be done without soldering.

I had to change the pcb connectors on my Zeddy as one of them was stripping the conductive layer off an RWAP keyboard ribbon....
On my harlequin 128K I've fitted pin headers to the PCB, currently running adaptors so that a standard ribbon can connect, but as soon as my SPeccherry keyboard is built then it will have female header sockets soldered to the ribbon cables.
I am so not a fan of the standard connectors and ribbon arrangement. Fine if you never take your computer apart, but for the likes of us who like to dabble/modify etc they are just not up to the job.

No need to remove any connectors, just solder the tails to the underside of the board in the sockets positions, dead easy but now they come with the little boards there is no need. The boards after being soldered to the cables as Lardo says just slot into the sockets, I believe Kempston and one or two others made an external keyboard using this method
